Takeaway Tikka Masala Sauce

Ingredients
  

  • - 2 tablespoons oil or ghee
  • - 1 medium onion finely chopped
  • - 3 garlic cloves minced
  • - 1-inch piece of ginger grated
  • - 1 teaspoon cumin
  • - 1 teaspoon ground coriander
  • - 1 teaspoon paprika
  • - 1 teaspoon garam masala
  • - ½ teaspoon turmeric
  • - ½ teaspoon chili powder adjust to taste
  • - 1 can 14 oz crushed tomatoes
  • - ½ cup heavy cream or coconut milk
  • - 2 tablespoons tomato paste
  • - 1 teaspoon sugar optional, to balance acidity
  • - Salt and pepper to taste
  • - Fresh cilantro chopped (for garnish)

Instructions
 

  • Heat oil or ghee in a large skillet over medium heat. Add the chopped onion and sauté until soft and golden, about 5 minutes.
  • Add the garlic and ginger, cooking for another 1-2 minutes until fragrant.
  • Stir in cumin, coriander, paprika, garam masala, turmeric, and chili powder. Cook for 30 seconds to release the flavors.
  • Pour in the crushed tomatoes and tomato paste, stirring well. Simmer for 10 minutes, stirring occasionally.
  • Add sugar (if using) and season with salt and pepper.
  • Stir in the heavy cream or coconut milk and simmer for another 5 minutes until the sauce thickens.
  • For a smoother consistency, blend the sauce using an immersion blender or let it cool slightly and blend in a regular blender.
  • Garnish with fresh cilantro and serve with grilled chicken, paneer, or vegetables over rice or naan.

Notes

- Make it dairy-free by using coconut milk instead of heavy cream.
- Adjust spice levels by adding more or less chili powder.
- Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
