Equipment

  • Large pot
  • Skillet
  • Tongs or pasta fork
  • Measuring cups and spoons

Ingredients

  • 12 ounces linguine or spaghetti
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter divided
  • 4 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional
  • 1 pound large shrimp peeled and deveined
  • 1/2 cup dry white wine such as Sauvignon Blanc or chicken broth
  • 1/4 cup fresh lemon juice about 1 lemon
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish
  • 1/4 cup grated Parmesan cheese optional

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  • While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
  • Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • Pour the white wine (or chicken broth) into the skillet, scraping up any browned bits from the bottom. Bring to a simmer and cook for 2 minutes. Stir in the lemon juice and the remaining 2 tablespoons of butter.
  • Return the shrimp to the skillet, then add the cooked pasta. Toss everything together, adding reserved pasta water as needed to create a silky sauce. Season with salt and black pepper to taste.
  • Serve immediately, garnished with fresh parsley and Parmesan cheese if desired.

Notes

Substitute white wine with chicken broth for an alcohol-free version.
Add extra flavor with a pinch of lemon zest or a sprinkle of crushed red pepper.
Serve with a side of crusty bread or a fresh green salad for a complete meal.
