1 whole chicken (about 4-5 lbs) 1/4 cup olive oil 1 lemon (juiced and zested) 6 cloves garlic (minced) 2 tsp dried thyme 2 tsp dried rosemary 1 tsp salt 1/2 tsp black pepper 1/2 cup chicken broth (optional, for basting)
