Ingredients
  

  • 1 whole chicken (about 4-5 lbs)
  • 1/4 cup olive oil
  • 1 lemon (juiced and zested)
  • 6 cloves garlic (minced)
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth (optional, for basting)

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a bowl, mix olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  • Pat the chicken dry with paper towels and place it in a roasting pan.
  • Rub the olive oil mixture all over the chicken, ensuring it’s well coated.
  • If desired, pour chicken broth into the bottom of the pan for added moisture.
  • Roast the chicken in the preheated oven for about 1 hr 15 min, or until the internal temperature reaches 165°F (75°C).
  • Baste the chicken with pan juices every 20-30 minutes for extra flavor.
  • Let the chicken rest for 10-15 minutes before carving and serving.

Notes

  • For added flavor, consider stuffing the cavity of the chicken with lemon halves and fresh herbs before roasting.
