Ingredients
  

  • 4 large potatoes peeled and diced
  • 1 medium onion chopped
  • 2 celery stalks chopped
  • 2 cups chicken or vegetable broth
  • 2 cups milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese optional
  • Bacon bits and chives for garnish

Instructions
 

  • In a large pot, melt butter over medium heat. Sauté onions and celery until softened.
  • Stir in flour and cook for 1 minute, then gradually add broth, stirring continuously.
  • Add potatoes and bring to a boil. Reduce heat and simmer for 15-20 minutes until potatoes are tender.
  • Blend the soup until smooth, using a blender or immersion blender.
  • Stir in milk, season with salt and pepper, and heat through.
  • Serve warm, garnished with cheddar cheese, bacon bits, and chives if desired.

Notes

For a dairy-free version, substitute milk with almond or oat milk.
