Instructions
In a large pot, melt butter over medium heat. Sauté onions and celery until softened.
Stir in flour and cook for 1 minute, then gradually add broth, stirring continuously.
Add potatoes and bring to a boil. Reduce heat and simmer for 15-20 minutes until potatoes are tender.
Blend the soup until smooth, using a blender or immersion blender.
Stir in milk, season with salt and pepper, and heat through.
Serve warm, garnished with cheddar cheese, bacon bits, and chives if desired.
Notes
For a dairy-free version, substitute milk with almond or oat milk.
