Ingredients
  

  • 1 pound breakfast sausage
  • 6 large eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 cups frozen hash browns thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers optional
  • 1/2 cup diced onions optional

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large skillet, cook the sausage over medium heat until browned and fully cooked. Drain any excess grease and set aside.
  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  • Spread the thawed hash browns evenly in the bottom of the prepared baking dish. Layer the cooked sausage on top. If using, sprinkle the bell peppers and onions over the sausage.
  • Pour the egg mixture evenly over the layers in the baking dish. Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden.
  • Allow to cool for 5 minutes before slicing and serving.

Notes

Customize the casserole by adding your favorite veggies, such as spinach or mushrooms.
For a spicier version, use hot sausage or add diced jalapeños.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat individual portions in the microwave.
This casserole can be prepared the night before. Cover and refrigerate, then bake the next morning. Adjust baking time by 5-10 minutes if starting cold.
