- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Stir in sun-dried tomatoes, chicken broth, and Italian seasoning; bring to a simmer.
