Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions
 

  • In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Stir in sun-dried tomatoes, chicken broth, and Italian seasoning; bring to a simmer.
  • Reduce heat and stir in heavy cream, then add fresh spinach. Cook until the spinach wilts, about 2-3 minutes.
  • Return the chicken to the skillet and coat with the sauce. Cook for an additional 2 minutes to heat through.
  • Serve hot, topped with grated Parmesan cheese.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
  • Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
