Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 garlic cloves minced
  • 1 lb ground beef
  • 1 bell pepper diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional
  • 1 28 oz can diced tomatoes
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese sour cream, green onions

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until softened.
  • Add ground beef and cook until browned, breaking it up with a spoon.
  • Stir in bell peppers, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for 2 minutes.
  • Add diced tomatoes, beans, and beef broth. Stir well and bring to a simmer.
  • Reduce heat to low and let simmer for 45 minutes, stirring occasionally.
  • Adjust seasoning with salt and pepper.
  • Serve hot with your favorite toppings.

Notes

For a milder chili, omit cayenne pepper. Add extra vegetables like zucchini or corn for a twist.
