Chicken Tikka Masala

Ingredients
  

  • 1 lb chicken breast, cubed
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 can diced tomatoes (14 oz)
  • 1 cup heavy cream
  • Fresh cilantro, for garnish

Instructions
 

  • In a mixing bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, paprika, turmeric, and salt. Add chicken and marinate for at least 1 hour (or overnight).
  • Preheat the oven to broil. Place marinated chicken on a baking tray and broil for 10-12 min until cooked through and slightly charred. Set aside.
  • In a skillet, heat oil over medium heat. Add chopped onion and sauté until translucent, about 5 min.
  • Stir in garlic and ginger, cooking for another minute until fragrant.
  • Add diced tomatoes to the skillet and simmer for 10 min, allowing the flavors to meld.
  • Stir in the heavy cream and add the broiled chicken. Simmer for another 5-10 min until heated through.
  • Garnish with fresh cilantro before serving.

Notes

  • Serve with basmati rice or naan for a complete meal.
  • Adjust spice levels by adding more or less paprika or chili powder.
