Equipment

  • Oven
  • Baking sheet
  • Shallow dishes (for breading)
  • Skillet
  • Meat mallet (or rolling pin)
  • Tongs

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil (for frying)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Place chicken breasts between two sheets of plastic wrap and pound to an even thickness.
  • Season flour with salt, pepper, and garlic powder in a shallow dish.
  • In another shallow dish, beat the eggs.
  • In a third dish, mix breadcrumbs with Italian seasoning and a pinch of salt.
  • Dredge each chicken breast in flour, shaking off excess, then dip in eggs, and finally coat in breadcrumbs.
  • Heat olive oil in a skillet over medium heat. Fry chicken breasts for 4-5 minutes per side until golden brown.
  • Transfer fried chicken to a baking sheet. Top each breast with marinara sauce, mozzarella, and Parmesan cheese.
  • Bake in the preheated oven for 15 minutes or until cheese is melted and bubbly.
  • Serve hot, garnished with fresh basil if desired.

Notes

  • For a healthier option, consider baking the breaded chicken instead of frying.
  • Serve with spaghetti or a side salad for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
