Ingredients:

  • 2 cups white vinegar
  • 2 cups filtered water
  • 2 tbsp kosher salt
  • 2 tbsp granulated sugar

Instructions:

  1. In a medium saucepan, combine the white vinegar, filtered water, kosher salt, and granulated sugar.
  2. Place the pan over medium-high heat and whisk continuously as the liquid warms.
  3. Bring the mixture to a gentle simmer until the salt and sugar have completely dissolved and the liquid is crystal clear.
  4. Remove the pan from the heat immediately. Allow the brine to cool for 5–10 minutes if using delicate vegetables, or pour boiling hot over hearty vegetables.
