Ingredients:
- 2 cups white vinegar
- 2 cups filtered water
- 2 tbsp kosher salt
- 2 tbsp granulated sugar
Instructions:
- In a medium saucepan, combine the white vinegar, filtered water, kosher salt, and granulated sugar.
- Place the pan over medium-high heat and whisk continuously as the liquid warms.
- Bring the mixture to a gentle simmer until the salt and sugar have completely dissolved and the liquid is crystal clear.
- Remove the pan from the heat immediately. Allow the brine to cool for 5–10 minutes if using delicate vegetables, or pour boiling hot over hearty vegetables.
