Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 3 tbsp taco seasoning
  • 1/2 cup beef broth
  • 10 small flour tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 medium Roma tomato, diced
  • 2 stalks green onion, sliced
  • 1 lime, cut into wedges

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is mahogany-brown and the onions are translucent.
  2. Stir in the minced garlic and taco seasoning, cooking for 1 minute until aromatic.
  3. Pour in the beef broth and simmer until the liquid reduces into a thick glaze that coats the meat.
  4. Preheat oven to 350°F (175°C). Spread a thin layer of cheese on the bottom of a 9x13 inch baking dish to prevent sticking.
  5. Place a layer of tortillas over the cheese, then spread 1/3 of the beef mixture evenly across the tortillas, followed by a handful of cheese.
  6. Repeat the layering process—tortilla, beef, cheese—until all ingredients are used, ending with a generous layer of cheese on top.
  7. Bake for 15-20 minutes until the cheese is bubbling and golden-brown around the edges.
  8. Remove from the oven and let rest for 5 minutes before slicing.
  9. Garnish with sour cream, chopped cilantro, diced tomato, sliced green onion, and lime wedges.
