Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 3 tbsp taco seasoning
- 1/2 cup beef broth
- 10 small flour tortillas
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 medium Roma tomato, diced
- 2 stalks green onion, sliced
- 1 lime, cut into wedges
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is mahogany-brown and the onions are translucent.
- Stir in the minced garlic and taco seasoning, cooking for 1 minute until aromatic.
- Pour in the beef broth and simmer until the liquid reduces into a thick glaze that coats the meat.
- Preheat oven to 350°F (175°C). Spread a thin layer of cheese on the bottom of a 9x13 inch baking dish to prevent sticking.
- Place a layer of tortillas over the cheese, then spread 1/3 of the beef mixture evenly across the tortillas, followed by a handful of cheese.
- Repeat the layering process—tortilla, beef, cheese—until all ingredients are used, ending with a generous layer of cheese on top.
- Bake for 15-20 minutes until the cheese is bubbling and golden-brown around the edges.
- Remove from the oven and let rest for 5 minutes before slicing.
- Garnish with sour cream, chopped cilantro, diced tomato, sliced green onion, and lime wedges.
