Ingredients:

  • 12 large eggs
  • 1/2 cup whole milk
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper
  • 1/2 tsp garlic powder
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup fresh chives, finely chopped
  • 12 slices thick-cut smoked bacon
  • 12 English muffins, split
  • 1/4 cup unsalted butter, melted
  • 2 cups baby spinach

Instructions:

  1. Preheat oven to 400°F (200°C). Lay bacon slices on a parchment-lined baking sheet and bake for 12-15 minutes until crisp. Transfer to paper towels.
  2. Line a 9x13 inch (23x33 cm) rimmed baking sheet with parchment paper. In a large bowl, whisk eggs, milk, salt, pepper, and garlic powder until fully combined.
  3. Pour the egg mixture into the prepared pan. Sprinkle with 2 cups of shredded cheddar cheese and the chopped chives.
  4. Bake the eggs at 400°F (200°C) for 10-12 minutes or until the center is just set and no longer giggles.
  5. Brush the split English muffins with melted butter and broil for 3-5 minutes until golden and crispy.
  6. Cut the egg slab into 12 equal squares. Assemble sandwiches by placing an egg square, a slice of bacon, baby spinach and the remaining cheese onto each toasted muffin.
