Ingredients:
- 1/2 cup (45g) Old Fashioned Rolled Oats
- 1 tablespoon (12g) Black or White Chia Seeds
- 1/2 cup (120ml) Unsweetened Almond Milk
- 1/3 cup (80g) Pure Pumpkin Puree
- 1 tablespoon (15ml) Pure Maple Syrup
- 1/2 teaspoon Pumpkin Pie Spice
- 1/4 teaspoon Vanilla Extract
- 1 pinch Sea Salt
- 1/4 cup (60g) Plain Greek Yogurt
Instructions:
- In a 16-ounce glass jar, combine the pumpkin puree, maple syrup, pumpkin pie spice, vanilla, salt, and Greek yogurt. Stir vigorously until the mixture is uniform and a consistent burnt orange color.
- Add the rolled oats and chia seeds to the jar. Pour the almond milk over the top and use a small spatula to fold the ingredients together, ensuring no dry pockets of oats remain at the bottom.
- Seal the lid tightly and shake for 10 seconds. Place the jar in the refrigerator for at least 4 hours, or overnight, to allow the oats to hydrate and reach a thick consistency.
