Ingredients:

  • 1/2 cup (45g) Old Fashioned Rolled Oats
  • 1 tablespoon (12g) Black or White Chia Seeds
  • 1/2 cup (120ml) Unsweetened Almond Milk
  • 1/3 cup (80g) Pure Pumpkin Puree
  • 1 tablespoon (15ml) Pure Maple Syrup
  • 1/2 teaspoon Pumpkin Pie Spice
  • 1/4 teaspoon Vanilla Extract
  • 1 pinch Sea Salt
  • 1/4 cup (60g) Plain Greek Yogurt

Instructions:

  1. In a 16-ounce glass jar, combine the pumpkin puree, maple syrup, pumpkin pie spice, vanilla, salt, and Greek yogurt. Stir vigorously until the mixture is uniform and a consistent burnt orange color.
  2. Add the rolled oats and chia seeds to the jar. Pour the almond milk over the top and use a small spatula to fold the ingredients together, ensuring no dry pockets of oats remain at the bottom.
  3. Seal the lid tightly and shake for 10 seconds. Place the jar in the refrigerator for at least 4 hours, or overnight, to allow the oats to hydrate and reach a thick consistency.
