Ingredients:
- 2 cups white vinegar (5% acidity)
- 2 cups filtered water
- 2 tbsp pickling salt
- 1 tbsp granulated sugar
- 1 tsp mustard seeds
- 1 tsp black peppercorns
- 1 tsp coriander seeds
- 3 cloves smashed garlic
Instructions:
- Pour the white vinegar and filtered water into a medium stainless steel saucepan. Add the pickling salt, sugar, mustard seeds, black peppercorns, coriander seeds, and smashed garlic.
- Place the saucepan over medium-high heat and bring the mixture to a gentle boil, whisking constantly to ensure the sugar and salt are completely dissolved and the liquid is crystal clear.
- Remove the pan from the heat immediately once the boil is reached.
- Allow the brine to cool for 10–15 minutes before pouring it over the prepared vegetables to prevent them from softening.
