Ingredients:

  • 2 cups white vinegar (5% acidity)
  • 2 cups filtered water
  • 2 tbsp pickling salt
  • 1 tbsp granulated sugar
  • 1 tsp mustard seeds
  • 1 tsp black peppercorns
  • 1 tsp coriander seeds
  • 3 cloves smashed garlic

Instructions:

  1. Pour the white vinegar and filtered water into a medium stainless steel saucepan. Add the pickling salt, sugar, mustard seeds, black peppercorns, coriander seeds, and smashed garlic.
  2. Place the saucepan over medium-high heat and bring the mixture to a gentle boil, whisking constantly to ensure the sugar and salt are completely dissolved and the liquid is crystal clear.
  3. Remove the pan from the heat immediately once the boil is reached.
  4. Allow the brine to cool for 10–15 minutes before pouring it over the prepared vegetables to prevent them from softening.
