Ingredients:
- 2 cups white distilled vinegar
- 2 cups filtered water
- 1/4 cup kosher salt
- 1 tbsp granulated sugar
- 4 cloves garlic, smashed
- 2 tbsp fresh dill, chopped
- 1 tbsp dill seeds
- 1 tsp whole black peppercorns
- 1 tsp yellow mustard seeds
- 1/2 tsp red pepper flakes
Instructions:
- In a medium saucepan, combine the white distilled vinegar, filtered water, kosher salt, and sugar. Stir over medium heat until the salt and sugar have completely dissolved, then bring to a gentle simmer.
- Stir in the smashed garlic, fresh dill, dill seeds, peppercorns, mustard seeds, and red pepper flakes. Lower the heat to low and let the mixture steep for 5 to 8 minutes until the liquid is pungent and garlic is translucent.
- Remove the pan from the heat and pour the hot brine through a fine-mesh strainer into a glass jar, discarding the solids. Let the juice cool to room temperature before sealing the lid.
