Ingredients:
- 1 cup Creamy Peanut Butter (Stabilized) (250g)
- 3/4 cup Dark Brown Sugar (Packed) (150g)
- 1/4 cup Granulated White Sugar (50g)
- 1/2 cup Unsalted Butter (Softened) (115g)
- 1 large Egg (Room Temperature)
- 1 tsp Vanilla Extract (5ml)
- 1 cup All-Purpose Flour (125g)
- 1/2 tsp Baking Soda (3g)
- 1/4 tsp Salt (1.5g)
Instructions:
- Beat the softened butter, brown sugar, and white sugar together on medium-high speed until the mixture is pale, fluffy, and resembles a thick paste.
- Beat in the egg and vanilla extract until fully emulsified and the mixture looks like a smooth, creamy frosting.
- Fold in the creamy peanut butter until the mixture is smooth.
- In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
- Slowly stir the dry ingredients into the wet ingredients, mixing only until the white streaks of flour disappear.
- Scoop rounded tablespoons of dough and roll them into 1-inch balls.
- Place balls on a lined baking sheet and press down with a fork in a criss-cross motion.
- Bake at 350°F (175°C) for 8–10 minutes. Remove when edges are golden tan but centers still look slightly soft and matte.
