Ingredients:

  • 1 cup Creamy Peanut Butter (Stabilized) (250g)
  • 3/4 cup Dark Brown Sugar (Packed) (150g)
  • 1/4 cup Granulated White Sugar (50g)
  • 1/2 cup Unsalted Butter (Softened) (115g)
  • 1 large Egg (Room Temperature)
  • 1 tsp Vanilla Extract (5ml)
  • 1 cup All-Purpose Flour (125g)
  • 1/2 tsp Baking Soda (3g)
  • 1/4 tsp Salt (1.5g)

Instructions:

  1. Beat the softened butter, brown sugar, and white sugar together on medium-high speed until the mixture is pale, fluffy, and resembles a thick paste.
  2. Beat in the egg and vanilla extract until fully emulsified and the mixture looks like a smooth, creamy frosting.
  3. Fold in the creamy peanut butter until the mixture is smooth.
  4. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Slowly stir the dry ingredients into the wet ingredients, mixing only until the white streaks of flour disappear.
  6. Scoop rounded tablespoons of dough and roll them into 1-inch balls.
  7. Place balls on a lined baking sheet and press down with a fork in a criss-cross motion.
  8. Bake at 350°F (175°C) for 8–10 minutes. Remove when edges are golden tan but centers still look slightly soft and matte.
