Ingredients:

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar, packed
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha
  • 1 lb lean ground beef
  • 1 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 tsp black pepper
  • 4 cups cooked jasmine rice
  • 3 stalks green onions, thinly sliced
  • 1 tbsp toasted sesame seeds

Instructions:

  1. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and Sriracha until the sugar is mostly dissolved.
  2. Heat vegetable oil in a 12-inch cast iron skillet or heavy-bottomed pan over medium-high heat until shimmering.
  3. Add the beef in a single layer and sear undisturbed for 3-4 minutes to develop a deep brown crust. Break the meat apart and cook until no longer pink.
  4. Stir in the minced garlic and grated ginger, cooking for 60 seconds until fragrant.
  5. Pour the sauce mixture over the beef. Stir constantly for 2-3 minutes as the sauce bubbles and thickens into a glossy lacquer.
  6. Divide the cooked rice into four bowls, top with the glazed beef, and garnish with sliced green onions and toasted sesame seeds.
