Ingredients:

  • 2 lbs skirt steak
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions:

  1. Mince the garlic cloves finely until they form a paste-like consistency.
  2. In a medium mixing bowl, combine the minced garlic, ground cumin, smoked paprika, salt, and black pepper; stir until combined to prevent clumping.
  3. Whisk in the brown sugar, soy sauce, Worcestershire sauce, and lime juice until the sugar has dissolved.
  4. Slowly stream in the olive oil while whisking vigorously until the mixture is glossy and fully emulsified.
  5. Place the room-temperature skirt steak into a large Ziploc bag, pour the marinade over the meat, seal the bag, and massage the liquid into the fibers for 30 seconds.
  6. Refrigerate and marinate for 2 to 4 hours before grilling.
