Ingredients:
- 6 cups seedless watermelon, cubed into 1-inch pieces
- 6 oz block feta cheese, cubed
- 1/4 cup red onion, very thinly sliced
- 2 cups fresh arugula
- 1/2 cup fresh mint leaves, torn
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 1/4 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Cube the chilled watermelon and slice the red onion.
- Combine olive oil, lime juice, honey, salt, and pepper in a small jar. Shake vigorously for 30 seconds until the mixture is opaque and thickened.
- Place the watermelon, red onion, and arugula in a large wide-bottomed bowl. Drizzle the dressing over the top and gently toss.
- Add the cubed feta and torn mint last, folding them in gently until just combined to keep the feta cubes intact.
