Ingredients:

  • 6 cups seedless watermelon, cubed into 1-inch pieces
  • 6 oz block feta cheese, cubed
  • 1/4 cup red onion, very thinly sliced
  • 2 cups fresh arugula
  • 1/2 cup fresh mint leaves, torn
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1/4 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Cube the chilled watermelon and slice the red onion.
  2. Combine olive oil, lime juice, honey, salt, and pepper in a small jar. Shake vigorously for 30 seconds until the mixture is opaque and thickened.
  3. Place the watermelon, red onion, and arugula in a large wide-bottomed bowl. Drizzle the dressing over the top and gently toss.
  4. Add the cubed feta and torn mint last, folding them in gently until just combined to keep the feta cubes intact.
