Ingredients:

  • 1.5 lbs Sirloin steak, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp red wine vinegar
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 large red bell pepper, cut into 1.5-inch pieces
  • 1 large green bell pepper, cut into 1.5-inch pieces
  • 1 large red onion, cut into 1.5-inch wedges
  • 1 cup cherry tomatoes
  • 1 cup cremini mushrooms, halved
  • 1 large Yukon Gold potato, par-boiled and cut into 1.5-inch cubes

Instructions:

  1. Pat the sirloin steak cubes dry with paper towels to promote better searing. In a large mixing bowl, whisk together the olive oil, soy sauce, red wine vinegar, Worcestershire sauce, minced garlic, dried oregano, black pepper, and red pepper flakes (if using) to create the marinade. Add the steak cubes to the marinade, ensuring all pieces are well coated.
  2. Marinate the steak for a minimum of 30 minutes at room temperature for flavor, or up to 4 hours in the refrigerator for enhanced tenderness. If marinating longer than 30 minutes, refrigerate.
  3. While the steak is marinating, prepare the vegetables. Cut the red bell pepper, green bell pepper, red onion, cherry tomatoes (if using), cremini mushrooms (if using), and par-boiled Yukon Gold potato (if using) into uniform 1.5 to 2-inch chunks. If using wooden skewers, immerse them in water for at least 30 minutes to prevent burning on the grill.
  4. Thread the marinated steak cubes and prepared vegetables alternately onto the metal or soaked wooden skewers.
  5. Preheat your grill (gas or charcoal) to medium-high heat. Grill the kabobs for 10-14 minutes, turning them frequently to achieve an even char and prevent overcooking on one side. Cook until the steak reaches your desired doneness (internal temperature of 135-140°F for medium-rare) and the vegetables are tender-crisp with a beautiful char.
  6. Once grilled, remove the kabobs from the grill and let them rest for 5 minutes. This allows the juices in the steak to redistribute, ensuring maximum tenderness and flavor. Serve immediately.
