Ingredients:
- 15.25 oz strawberry cake mix
- 1 tsp pure vanilla extract
- 2 large eggs
- 0.5 cup unsalted butter, melted and cooled
- 1 tbsp strawberry gelatin powder
- 0.25 cup granulated sugar
- 24 pieces milk chocolate kisses
Instructions:
- Preheat your oven to 350°F (175°C) and line your sheets with parchment.
- In a large bowl, combine the 15.25 oz strawberry cake mix, 2 large eggs, 0.5 cup melted (and cooled!) unsalted butter, and 1 tsp pure vanilla extract.
- Mix on medium speed until a thick, tacky dough forms and no dry streaks remain.
- In a small shallow bowl, whisk together the 0.25 cup granulated sugar and 1 tbsp strawberry gelatin powder.
- Scoop 1 tablespoon of dough and roll it into a smooth ball. Drop it into the sugar gelatin mixture.
- Roll the ball until it's completely encrusted in pink sugar.
- Place the balls 2 inches apart on the baking sheet. Bake for 10 minutes until the tops look slightly cracked but the center is still soft.
- Let the cookies sit on the hot pan for exactly 2 minutes.
- Gently press a milk chocolate kiss into the center of each warm cookie.
- Transfer to a wire rack. The chocolate will look glossy as it softens from the residual heat.
