Ingredients:
- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp olive oil
- 1 cup fresh baby spinach
- 1/2 cup shredded mozzarella
- 1 tbsp everything bagel seasoning
- 1 tsp sesame seeds
Instructions:
- Blend the cottage cheese and olive oil. Process on high until the mixture is completely smooth and no curds remain. Note: This is the key to the velvety texture.
- Transfer the mixture to a bowl. Fold in the flour, baking powder, and salt.
- Stir in the chopped spinach and mozzarella. Mix until a thick, tacky dough forms. Note: Don't overmix or the bagels will become tough.
- Line your tray. Form the dough into a thick log about 6 inches long.
- Divide into 6 equal pieces. Flatten each into a disc and press a hole into the center.
- Top with everything bagel seasoning and sesame seeds. Press them in lightly so they stick.
- Bake at 375°F (190°C) for 20-25 minutes.
- Remove until the edges are mahogany colored and the centers feel firm.
