Ingredients:

  • 4 cups (600g) frozen corn
  • 3 tbsp (42g) unsalted butter, melted
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) smoked paprika
  • 1/4 tsp (1g) garlic powder
  • 1/4 tsp (1g) cracked black pepper
  • 1 tbsp (15ml) fresh lime juice
  • 2 tbsp (8g) chopped fresh parsley

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the frozen corn with melted butter, salt, smoked paprika, garlic powder, and black pepper until every kernel is evenly coated.
  3. Spread the corn in a single, thin layer on the prepared baking sheet. Roast for 12–15 minutes, ensuring the kernels pop and turn a deep golden-brown.
  4. Remove from the oven and immediately drizzle with fresh lime juice and sprinkle with chopped parsley.
