Ingredients:
- 4 cups (600g) frozen corn
- 3 tbsp (42g) unsalted butter, melted
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) smoked paprika
- 1/4 tsp (1g) garlic powder
- 1/4 tsp (1g) cracked black pepper
- 1 tbsp (15ml) fresh lime juice
- 2 tbsp (8g) chopped fresh parsley
Instructions:
- Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the frozen corn with melted butter, salt, smoked paprika, garlic powder, and black pepper until every kernel is evenly coated.
- Spread the corn in a single, thin layer on the prepared baking sheet. Roast for 12–15 minutes, ensuring the kernels pop and turn a deep golden-brown.
- Remove from the oven and immediately drizzle with fresh lime juice and sprinkle with chopped parsley.
