Ingredients:

  • 1 oz blue raspberry syrup
  • 0.5 oz sweetened cream of coconut
  • 0.5 oz freshly squeezed lime juice
  • 8 oz sparkling mineral water
  • 1 cup pebble ice

Instructions:

  1. Place your 1 cup pebble ice into a tall glass. Note: Packing the ice to the top helps support the layers.
  2. Pour 1 oz blue raspberry syrup directly over the ice. Watch it sink to the bottom.
  3. Carefully pour 0.5 oz sweetened cream of coconut over the center of the ice.
  4. Pour 0.5 oz freshly squeezed lime juice. Note: The acid starts to react with the coconut here.
  5. Slow pour 8 oz sparkling mineral water down the side of the glass. Listen for the fizzing sound.
  6. Use a long spoon to lift the syrup from the bottom just once or twice. Watch for the blue swirls.
  7. Wait 30 seconds for the glass to frost up.
  8. Garnish with a lime wheel or a maraschino cherry.
