Ingredients:
- 1 oz blue raspberry syrup
- 0.5 oz sweetened cream of coconut
- 0.5 oz freshly squeezed lime juice
- 8 oz sparkling mineral water
- 1 cup pebble ice
Instructions:
- Place your 1 cup pebble ice into a tall glass. Note: Packing the ice to the top helps support the layers.
- Pour 1 oz blue raspberry syrup directly over the ice. Watch it sink to the bottom.
- Carefully pour 0.5 oz sweetened cream of coconut over the center of the ice.
- Pour 0.5 oz freshly squeezed lime juice. Note: The acid starts to react with the coconut here.
- Slow pour 8 oz sparkling mineral water down the side of the glass. Listen for the fizzing sound.
- Use a long spoon to lift the syrup from the bottom just once or twice. Watch for the blue swirls.
- Wait 30 seconds for the glass to frost up.
- Garnish with a lime wheel or a maraschino cherry.
