Ingredients:

  • 1/4 cup pure maple syrup
  • 1 tbsp brown sugar, packed
  • 1/2 tsp vanilla extract
  • 1 pinch fine sea salt
  • 2 shots fresh espresso
  • 1 cup whole milk
  • 1 pinch ground cinnamon
  • 1 tsp maple syrup

Instructions:

  1. Combine maple syrup, brown sugar, and salt in a small saucepan over medium low heat.
  2. Stir constantly for 2-3 minutes until the sugar dissolves and the mixture looks mahogany colored.
  3. Remove from heat and stir in the vanilla extract. Note: Adding vanilla at the end keeps the flavor from evaporating.
  4. Extract two shots of espresso.
  5. Pour the hot coffee into a mug and stir in 1 tablespoon of the prepared waffle syrup until fully blended.
  6. Heat the milk until steaming. Note: Do not let it boil or the foam will collapse.
  7. Use a handheld frother for 20-30 seconds, tilting the pitcher to create a velvety micro foam.
  8. Slowly pour the frothed milk over the sweetened espresso.
  9. Dollop the remaining foam on top.
  10. Finish with a dusting of cinnamon and a drizzle of maple syrup.
