Ingredients:

  • 1 cup pearl couscous
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 1/4 cups chicken or vegetable broth
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 large lemon, zested and 2 tbsp juice
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tbsp fresh Italian parsley, chopped

Instructions:

  1. Heat the butter and olive oil in a medium saucepan over medium heat.
  2. Add the pearl couscous and stir constantly for 3–5 minutes until the pearls turn a mahogany-gold color.
  3. Add the minced garlic and cook for an additional 60 seconds until fragrant.
  4. Pour in the broth, salt, and pepper. Bring the mixture to a boil.
  5. Immediately reduce heat to low, cover with a tight-fitting lid, and simmer for 10–12 minutes until the liquid is fully absorbed.
  6. Remove the pan from heat.
  7. Stir in the lemon zest, lemon juice, and freshly grated Parmesan until the cheese melts into a glossy sauce.
  8. Fold in the chopped parsley and serve immediately.
