Ingredients:
- 1 cup pearl couscous
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 1/4 cups chicken or vegetable broth
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 large lemon, zested and 2 tbsp juice
- 1/2 cup Parmesan cheese, freshly grated
- 2 tbsp fresh Italian parsley, chopped
Instructions:
- Heat the butter and olive oil in a medium saucepan over medium heat.
- Add the pearl couscous and stir constantly for 3–5 minutes until the pearls turn a mahogany-gold color.
- Add the minced garlic and cook for an additional 60 seconds until fragrant.
- Pour in the broth, salt, and pepper. Bring the mixture to a boil.
- Immediately reduce heat to low, cover with a tight-fitting lid, and simmer for 10–12 minutes until the liquid is fully absorbed.
- Remove the pan from heat.
- Stir in the lemon zest, lemon juice, and freshly grated Parmesan until the cheese melts into a glossy sauce.
- Fold in the chopped parsley and serve immediately.
