Ingredients:
- 1/2 cup (120ml) soy sauce
- 1/4 cup (85g) honey
- 2 tbsp (30ml) rice vinegar
- 2 tbsp (30ml) toasted sesame oil
- 3 cloves (15g) garlic, minced
- 1 tbsp (15g) fresh ginger, grated
- 1/2 tsp (3g) black pepper
- 1 tsp (5g) kosher salt
- 1.5 lbs (680g) skirt steak
- 2 tbsp (30ml) neutral oil
- 2 stalks (30g) green onions, thinly sliced
- 1 tsp (5g) toasted sesame seeds
Instructions:
- In a medium bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and pepper. Whisk until the honey is fully dissolved and the mixture is homogenous.
- Place the skirt steak in a Ziploc bag and pour the Honey Soy Steak Marinade over it. Massage the bag to ensure the meat is fully coated.
- Refrigerate for at least 1 hour, but do not exceed 8 hours.
- Remove the steak from the fridge 20 minutes before cooking. Pat the surface dry with paper towels to ensure a proper sear.
- Heat 2 tbsp of neutral oil in a cast iron skillet or on a grill over high heat until the oil begins to shimmer and just barely smoke.
- Lay the steak in the pan and sear for 3–5 minutes per side until a deep mahogany color is achieved and the interior reaches your target temperature.
- Slice the steak perpendicularly against the grain into thin strips and garnish with sliced green onions and toasted sesame seeds.
