Ingredients:
- 2 lbs sweet potatoes, scrubbed and cubed into 1-inch pieces
- 2 tbsp extra virgin olive oil
- 1 tsp flaky sea salt
- 3 tbsp raw clover honey
- 1 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1/2 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C) and place an empty rimmed baking sheet inside to heat.
- In a large mixing bowl, toss the 1-inch sweet potato cubes with olive oil and flaky sea salt until evenly coated.
- Carefully remove the hot baking sheet from the oven and spread the potatoes in a single layer. Roast for 15 minutes until edges begin to brown.
- Whisk together the honey, cinnamon, cayenne pepper, and black pepper in a small bowl.
- Drizzle the honey mixture over the semi-roasted potatoes and toss directly on the pan. Return to the oven for 10 minutes until a lacquered, bubbling crust forms.
