Ingredients:

  • 1.5 lbs salmon fillet, center-cut, skin-on
  • 1 tsp extra virgin olive oil
  • 0.5 tsp coarse sea salt
  • 0.25 tsp cracked black pepper
  • 3 tbsp stone-ground or Dijon mustard
  • 2 tbsp raw honey
  • 1 tbsp whole grain mustard
  • 2 cloves garlic, finely minced
  • 1 tsp fresh lemon juice
  • 0.5 tsp smoked paprika

Instructions:

  1. In a small glass bowl, whisk together the raw honey, Dijon mustard, whole grain mustard, minced garlic, lemon juice, and smoked paprika until the mixture is glossy and emulsified.
  2. Preheat your oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper.
  3. Pat the salmon fillets bone-dry with paper towels. Rub the skin side with olive oil and place them skin-side down on the prepared sheet pan. Season the flesh with sea salt and cracked pepper.
  4. Using a silicone basting brush, generously apply the honey mustard glaze over the top and sides of the salmon.
  5. Roast for 12-15 minutes, or until the internal temperature reaches 145°F for a flaky, medium finish and the glaze has formed a bubbling crust.
