Ingredients:
- 1.5 lbs salmon fillet, center-cut, skin-on
- 1 tsp extra virgin olive oil
- 0.5 tsp coarse sea salt
- 0.25 tsp cracked black pepper
- 3 tbsp stone-ground or Dijon mustard
- 2 tbsp raw honey
- 1 tbsp whole grain mustard
- 2 cloves garlic, finely minced
- 1 tsp fresh lemon juice
- 0.5 tsp smoked paprika
Instructions:
- In a small glass bowl, whisk together the raw honey, Dijon mustard, whole grain mustard, minced garlic, lemon juice, and smoked paprika until the mixture is glossy and emulsified.
- Preheat your oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper.
- Pat the salmon fillets bone-dry with paper towels. Rub the skin side with olive oil and place them skin-side down on the prepared sheet pan. Season the flesh with sea salt and cracked pepper.
- Using a silicone basting brush, generously apply the honey mustard glaze over the top and sides of the salmon.
- Roast for 12-15 minutes, or until the internal temperature reaches 145°F for a flaky, medium finish and the glaze has formed a bubbling crust.
