Ingredients:

  • 4 tbsp (56g) unsalted butter
  • 1/4 cup (32g) all-purpose flour
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) whole milk
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) ground black pepper
  • 1/4 tsp (1g) onion powder
  • 1/4 tsp (1g) garlic powder
  • 1/2 cup (60g) cooked chicken breast, finely minced

Instructions:

  1. Melt the butter in your saucepan over medium heat. Once bubbling, whisk in the flour and stir constantly for 1-2 minutes until the mixture smells nutty and looks like a pale golden paste.
  2. Slowly pour in the chicken broth while whisking vigorously. Once the mixture is smooth, gradually stir in the milk, continuing to whisk until the liquid is fully incorporated and the texture is silky.
  3. Stir in the salt, pepper, onion powder, and garlic powder. Add the minced cooked chicken. Simmer on low for 3-5 minutes, stirring occasionally, until the soup thickens enough to coat the back of a spoon.
