Ingredients:

  • 1 cup cottage cheese, 2% milkfat
  • 2 large eggs
  • 1 scoop vanilla protein powder (30g)
  • 0.5 cup oat flour
  • 1 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch fine sea salt
  • 0.5 cup fresh blueberries
  • 1 tsp coconut oil for greasing

Instructions:

  1. Place 1 cup cottage cheese, 2 large eggs, 1 tsp vanilla extract, and 1 pinch fine sea salt into a blender.
  2. Add 1 scoop vanilla protein powder, 0.5 cup oat flour, 1 tsp baking powder, and 0.5 tsp ground cinnamon to the wet mix.
  3. Pulse just 3-4 times until the white streaks of flour disappear.
  4. Let the mixture sit for 5 minutes.
  5. Set your skillet over medium low heat and add 1 tsp coconut oil.
  6. Pour 1/4 cup of batter per pancake.
  7. Drop several of the 0.5 cup fresh blueberries onto the top of each raw pancake.
  8. Cook for 3 minutes until the edges look matte and firm.
  9. Flip and cook for another 2 minutes until the berries start to pop.
  10. Transfer to a plate and let them sit for 60 seconds before cutting in.
