Ingredients:
- 1 cup cottage cheese, 2% milkfat
- 2 large eggs
- 1 scoop vanilla protein powder (30g)
- 0.5 cup oat flour
- 1 tsp baking powder
- 0.5 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 pinch fine sea salt
- 0.5 cup fresh blueberries
- 1 tsp coconut oil for greasing
Instructions:
- Place 1 cup cottage cheese, 2 large eggs, 1 tsp vanilla extract, and 1 pinch fine sea salt into a blender.
- Add 1 scoop vanilla protein powder, 0.5 cup oat flour, 1 tsp baking powder, and 0.5 tsp ground cinnamon to the wet mix.
- Pulse just 3-4 times until the white streaks of flour disappear.
- Let the mixture sit for 5 minutes.
- Set your skillet over medium low heat and add 1 tsp coconut oil.
- Pour 1/4 cup of batter per pancake.
- Drop several of the 0.5 cup fresh blueberries onto the top of each raw pancake.
- Cook for 3 minutes until the edges look matte and firm.
- Flip and cook for another 2 minutes until the berries start to pop.
- Transfer to a plate and let them sit for 60 seconds before cutting in.
