Ingredients:
- 2 cups Old Fashioned Rolled Oats
- 1 tsp Baking Soda
- 0.5 tsp Sea Salt
- 1 tsp Ground Cinnamon
- 3 large Overripe Bananas
- 2 large Eggs
- 0.5 cup Non-fat Greek Yogurt
- 0.25 cup Unsweetened Applesauce
- 1 tsp Pure Vanilla Extract
- 2 tbsp Honey
Instructions:
- Preheat your oven to 175°C and grease a 12 cup muffin tin or use silicone liners.
- Mash the 3 overripe bananas in a large bowl until mostly smooth with only tiny lumps.
- Whisk in the 2 eggs, 0.5 cup Greek yogurt, 0.25 cup applesauce, 2 tbsp honey, and 1 tsp vanilla extract.
- Stir until the wet ingredients are fully combined and the mixture looks velvety.
- Fold in the 2 cups of oats, 1 tsp baking soda, 1 tsp cinnamon, and 0.5 tsp sea salt.
- Rest the batter for 5 minutes until the oats have slightly softened and thickened the mixture.
- Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
- Bake for 15 minutes until the tops are golden brown and spring back when touched.
- Cool in the pan for 5 minutes to let the structure set before transferring to a wire rack.
