Ingredients:
- 2 lbs English cucumbers, sliced into 1-inch thick rounds
- 2 tbsp avocado oil
- 1/2 tsp kosher salt
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp fresh lemon juice
- 1 tsp honey
- 1/4 tsp cracked black pepper
- 1/4 cup fresh mint leaves, torn
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1 tbsp chili crisp
Instructions:
- Preheat your grill or cast-iron grill pan to medium-high heat.
- In a large bowl, toss the cucumber rounds with avocado oil and kosher salt until lightly coated.
- Place cucumber rounds on the grill and sear for 3–4 minutes per side without moving them, until mahogany-colored grill marks appear and the edges soften while the center remains firm.
- Transfer the warm grilled cucumbers to a mixing bowl.
- Whisk together the extra virgin olive oil, apple cider vinegar, lemon juice, honey, and black pepper to create the vinaigrette.
- Pour the vinaigrette over the warm cucumbers and gently fold in the sliced red onion, torn mint leaves, and crumbled feta.
- Garnish with optional chili crisp and serve immediately.
