Ingredients:

  • 1/2 cup water
  • 1/2 cup brown sugar, packed
  • 2 tbsp unsulphured molasses
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 oz strong espresso
  • 1 cup whole milk
  • whipped cream
  • pinch of cinnamon

Instructions:

  1. In a small saucepan over medium heat, combine the water, brown sugar, molasses, ginger, cinnamon, cloves, and salt. Bring to a gentle simmer, whisking constantly until the sugar is fully dissolved and the mixture looks like a smooth, mahogany-colored glaze. Remove from heat and stir in the vanilla extract.
  2. Prepare 2 oz (60ml) of espresso or very strong coffee. Pour the hot coffee into a mug and immediately stir in 2 tbsp (30ml) of the warm gingerbread syrup.
  3. Heat 1 cup of milk to approximately 150°F (65°C) and use a frother to create a thick layer of micro-foam. Gently pour the steamed milk over the spiced coffee, holding back the foam until the end. Top with whipped cream and a dusting of cinnamon.
