Ingredients:

  • 1 lb fresh string beans, trimmed and washed
  • 1 tsp kosher salt
  • 2 tbsp avocado oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic, thinly sliced
  • 1/2 tsp cracked black pepper
  • 1 tbsp fresh lemon juice

Instructions:

  1. Toss the trimmed beans in a bowl with the kosher salt and let them sit for 10 minutes, then pat them completely dry with paper towels.
  2. Heat the avocado oil in a 12-inch cast iron skillet over medium-high heat until it shimmers and begins to show wisps of smoke.
  3. Add the beans in a single layer and leave them undisturbed for 2-3 minutes until mahogany-colored blistered spots develop.
  4. Add the sliced garlic and butter to the pan; stir-fry for 60-90 seconds until the garlic is golden and the butter is foamy.
  5. Remove the skillet from heat immediately and drizzle with fresh lemon juice before serving.
