Ingredients:
- 1 large head broccoli (approx. 500g), cut into medium-sized florets
- 3 large carrots (approx. 300g), peeled and sliced into 1/4-inch thick rounds
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning (dried oregano, thyme, and rosemary)
- 0.5 tsp smoked paprika
- Sea salt to taste
- Cracked black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Ensure the oven rack is positioned in the center.
- Prepare the vegetables using 'Precision Slicing': cut the dense carrots into thin 1/4-inch coins and keep the broccoli in larger, bushy florets to synchronize their cooking times.
- Place the prepared broccoli and carrots into a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, smoked paprika, salt, and pepper.
- Toss the vegetables thoroughly in the bowl to ensure a microscopic, even coating of oil and spices on all surfaces.
- Spread the vegetables onto a large rimmed baking sheet in a single layer. Do not crowd the pan; ensure there is space between pieces to allow steam to escape and promote caramelization.
- Roast in the preheated oven for 20 minutes or until the broccoli edges are charred and the carrots are tender and mahogany-colored.
