Ingredients:

  • 1 large head broccoli (approx. 500g), cut into medium-sized florets
  • 3 large carrots (approx. 300g), peeled and sliced into 1/4-inch thick rounds
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning (dried oregano, thyme, and rosemary)
  • 0.5 tsp smoked paprika
  • Sea salt to taste
  • Cracked black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Ensure the oven rack is positioned in the center.
  2. Prepare the vegetables using 'Precision Slicing': cut the dense carrots into thin 1/4-inch coins and keep the broccoli in larger, bushy florets to synchronize their cooking times.
  3. Place the prepared broccoli and carrots into a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, smoked paprika, salt, and pepper.
  4. Toss the vegetables thoroughly in the bowl to ensure a microscopic, even coating of oil and spices on all surfaces.
  5. Spread the vegetables onto a large rimmed baking sheet in a single layer. Do not crowd the pan; ensure there is space between pieces to allow steam to escape and promote caramelization.
  6. Roast in the preheated oven for 20 minutes or until the broccoli edges are charred and the carrots are tender and mahogany-colored.
