Ingredients:

  • 1 cup (240ml) white distilled vinegar
  • 1 cup (240ml) filtered water
  • 1 tbsp (18g) kosher salt
  • 1 tbsp (12g) granulated sugar
  • 4 cloves (20g) garlic, smashed
  • 2 tbsp (6g) fresh dill heads or chopped sprigs
  • 1 tsp (3g) black peppercorns
  • 1 tsp (2g) mustard seeds
  • 1/2 tsp (1g) red pepper flakes

Instructions:

  1. Combine the white distilled vinegar, filtered water, kosher salt, and sugar in a medium stainless steel saucepan.
  2. Place the pan over medium-high heat and stir constantly with a whisk to ensure the salt and sugar are evenly distributed.
  3. Bring the mixture to a gentle boil and continue to stir for 1–2 minutes until the crystals have completely dissolved and the liquid is clear.
  4. Remove the pan from the heat and let the brine sit for 10 minutes to drop slightly in temperature.
  5. Pour the liquid directly over prepared vegetables and aromatics in glass Mason jars, ensuring all ingredients are fully submerged.
