Ingredients:
- 1 cup (240ml) white distilled vinegar
- 1 cup (240ml) filtered water
- 1 tbsp (18g) kosher salt
- 1 tbsp (12g) granulated sugar
- 4 cloves (20g) garlic, smashed
- 2 tbsp (6g) fresh dill heads or chopped sprigs
- 1 tsp (3g) black peppercorns
- 1 tsp (2g) mustard seeds
- 1/2 tsp (1g) red pepper flakes
Instructions:
- Combine the white distilled vinegar, filtered water, kosher salt, and sugar in a medium stainless steel saucepan.
- Place the pan over medium-high heat and stir constantly with a whisk to ensure the salt and sugar are evenly distributed.
- Bring the mixture to a gentle boil and continue to stir for 1–2 minutes until the crystals have completely dissolved and the liquid is clear.
- Remove the pan from the heat and let the brine sit for 10 minutes to drop slightly in temperature.
- Pour the liquid directly over prepared vegetables and aromatics in glass Mason jars, ensuring all ingredients are fully submerged.
