Ingredients:
- 2 large English cucumbers, thinly sliced (approx. 1.5 lbs / 680g)
- ½ small red onion, thinly sliced (approx. 2 oz / 55g)
- ¼ cup (15g) fresh dill, chopped
- ⅓ cup (80ml) rice vinegar
- 2 tbsp (25g) granulated sugar
- ½ tsp (3g) fine sea salt
- ¼ tsp (1g) cracked black pepper
Instructions:
- Slice the English cucumbers into rounds roughly 1/8 inch thick and thinly shave the red onion into half-moons. Place both in a large bowl.
- In a small bowl or jar, combine the rice vinegar, sugar, salt, and pepper. Whisk vigorously until the sugar crystals have completely dissolved and the liquid looks clear and glossy.
- Pour the dressing over the cucumber and onion mixture and toss gently to ensure every slice is coated.
- Stir in the chopped fresh herbs.
- Let the salad rest in the refrigerator for at least 20 minutes to allow the flavors to meld.
