Ingredients:

  • 2 large English cucumbers, thinly sliced (approx. 1.5 lbs / 680g)
  • ½ small red onion, thinly sliced (approx. 2 oz / 55g)
  • ¼ cup (15g) fresh dill, chopped
  • ⅓ cup (80ml) rice vinegar
  • 2 tbsp (25g) granulated sugar
  • ½ tsp (3g) fine sea salt
  • ¼ tsp (1g) cracked black pepper

Instructions:

  1. Slice the English cucumbers into rounds roughly 1/8 inch thick and thinly shave the red onion into half-moons. Place both in a large bowl.
  2. In a small bowl or jar, combine the rice vinegar, sugar, salt, and pepper. Whisk vigorously until the sugar crystals have completely dissolved and the liquid looks clear and glossy.
  3. Pour the dressing over the cucumber and onion mixture and toss gently to ensure every slice is coated.
  4. Stir in the chopped fresh herbs.
  5. Let the salad rest in the refrigerator for at least 20 minutes to allow the flavors to meld.
