Ingredients:

  • 1.5 cups (340g) full-fat cottage cheese (4% milkfat)
  • 3 strips (45g) thick-cut bacon
  • 0.5 medium (80g) avocado, diced
  • 0.5 cup (75g) grape tomatoes, quartered
  • 1 cup (30g) romaine lettuce, shredded
  • 1 tbsp (4g) fresh chives, minced
  • 1 tsp (5ml) extra virgin olive oil
  • 0.25 tsp (1.25g) cracked black pepper
  • 1 pinch (0.5g) flaky sea salt

Instructions:

  1. Place bacon strips in a cold skillet over medium heat. Render the fat slowly until the bacon is deep mahogany and brittle. Transfer to paper towels to drain, then chop into bite-sized shards.
  2. In a medium serving bowl, add the cold cottage cheese. Fold in the cracked black pepper and a pinch of salt, smoothing the top with a spoon.
  3. Arrange the shredded romaine lettuce, quartered grape tomatoes, and diced avocado on top of the cottage cheese base.
  4. Top the bowl with the prepared crispy bacon shards.
  5. Drizzle with extra virgin olive oil and garnish with minced chives and optional Everything Bagel seasoning.
