Ingredients:
- 1.5 cups (340g) full-fat cottage cheese (4% milkfat)
- 3 strips (45g) thick-cut bacon
- 0.5 medium (80g) avocado, diced
- 0.5 cup (75g) grape tomatoes, quartered
- 1 cup (30g) romaine lettuce, shredded
- 1 tbsp (4g) fresh chives, minced
- 1 tsp (5ml) extra virgin olive oil
- 0.25 tsp (1.25g) cracked black pepper
- 1 pinch (0.5g) flaky sea salt
Instructions:
- Place bacon strips in a cold skillet over medium heat. Render the fat slowly until the bacon is deep mahogany and brittle. Transfer to paper towels to drain, then chop into bite-sized shards.
- In a medium serving bowl, add the cold cottage cheese. Fold in the cracked black pepper and a pinch of salt, smoothing the top with a spoon.
- Arrange the shredded romaine lettuce, quartered grape tomatoes, and diced avocado on top of the cottage cheese base.
- Top the bowl with the prepared crispy bacon shards.
- Drizzle with extra virgin olive oil and garnish with minced chives and optional Everything Bagel seasoning.
