Ingredients:
- 2 cups white distilled vinegar
- 1 cup filtered water
- 1/4 cup kosher salt
- 1 tbsp granulated sugar
- 1 tsp whole black peppercorns
- 4 cloves garlic, smashed
- 2 tbsp fresh chopped dill
- 1 tsp mustard seeds
Instructions:
- In a saucepan, combine white distilled vinegar and filtered water. Stir in the kosher salt and granulated sugar using a whisk.
- Heat over medium-high heat, stirring constantly, until the salt and sugar have completely dissolved and the liquid is shimmering but not yet at a rolling boil.
- Add the smashed garlic cloves, whole black peppercorns, and mustard seeds to the simmering liquid.
- Reduce heat to low and let the aromatics steep for 3–5 minutes until the garlic becomes fragrant.
- Remove the pan from the heat and stir in the fresh dill.
- Allow the brine to cool for approximately 10 minutes before pouring over vegetables to preserve the bright herbal note of the dill.
