Ingredients:

  • 2 cups white distilled vinegar
  • 1 cup filtered water
  • 1/4 cup kosher salt
  • 1 tbsp granulated sugar
  • 1 tsp whole black peppercorns
  • 4 cloves garlic, smashed
  • 2 tbsp fresh chopped dill
  • 1 tsp mustard seeds

Instructions:

  1. In a saucepan, combine white distilled vinegar and filtered water. Stir in the kosher salt and granulated sugar using a whisk.
  2. Heat over medium-high heat, stirring constantly, until the salt and sugar have completely dissolved and the liquid is shimmering but not yet at a rolling boil.
  3. Add the smashed garlic cloves, whole black peppercorns, and mustard seeds to the simmering liquid.
  4. Reduce heat to low and let the aromatics steep for 3–5 minutes until the garlic becomes fragrant.
  5. Remove the pan from the heat and stir in the fresh dill.
  6. Allow the brine to cool for approximately 10 minutes before pouring over vegetables to preserve the bright herbal note of the dill.
