Ingredients:

  • 2 slices Sprouted grain bread
  • 1/2 ripe Hass avocado
  • 1/2 English cucumber, sliced into 1/8-inch rounds
  • 1/4 cup Alfalfa sprouts
  • 3 thin rings Red onion
  • 1 tbsp Plain Greek yogurt
  • 1 tsp Fresh lime juice
  • 1/4 tsp Everything Bagel Seasoning

Instructions:

  1. Slice the cucumber into thin rounds using a mandoline. Place them on a paper towel, sprinkle with a pinch of salt, and let rest for 3 minutes. Pat the tops dry to remove excess moisture.
  2. In a small bowl, combine the avocado, Greek yogurt, and lime juice. Mash with a fork until mostly smooth but still holding some structural chunks.
  3. Toast the sprouted grain bread until it reaches a deep golden brown to create a firm moisture barrier.
  4. Spread the avocado mixture generously across both slices of toasted bread.
  5. On the bottom slice, layer the microgreens/sprouts, followed by the dry cucumber slices and red onion rings. Sprinkle with Everything Bagel Seasoning.
  6. Press the top slice of bread firmly onto the vegetables to lock the layers and cut diagonally using a serrated knife.
