Ingredients:
- 2 slices Sprouted grain bread
- 1/2 ripe Hass avocado
- 1/2 English cucumber, sliced into 1/8-inch rounds
- 1/4 cup Alfalfa sprouts
- 3 thin rings Red onion
- 1 tbsp Plain Greek yogurt
- 1 tsp Fresh lime juice
- 1/4 tsp Everything Bagel Seasoning
Instructions:
- Slice the cucumber into thin rounds using a mandoline. Place them on a paper towel, sprinkle with a pinch of salt, and let rest for 3 minutes. Pat the tops dry to remove excess moisture.
- In a small bowl, combine the avocado, Greek yogurt, and lime juice. Mash with a fork until mostly smooth but still holding some structural chunks.
- Toast the sprouted grain bread until it reaches a deep golden brown to create a firm moisture barrier.
- Spread the avocado mixture generously across both slices of toasted bread.
- On the bottom slice, layer the microgreens/sprouts, followed by the dry cucumber slices and red onion rings. Sprinkle with Everything Bagel Seasoning.
- Press the top slice of bread firmly onto the vegetables to lock the layers and cut diagonally using a serrated knife.
