Ingredients:
- 1 lb ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 3 large bell peppers, chopped into 1-inch pieces
- 28 oz crushed tomatoes
- 15 oz tomato sauce
- 3 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 2 cups cooked white rice
- 1/4 cup fresh parsley, chopped
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the meat is browned and the onions are translucent. Stir in the minced garlic for the last 60 seconds until fragrant. Drain excess grease.
- Transfer the beef mixture to the slow cooker. Stir in the chopped bell peppers, crushed tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, and paprika.
- Cover and cook on LOW for 6 hours until the peppers are tender.
- Stir in the cooked rice and let it simmer on high for another 10–15 minutes until the rice is plump. Stir in the fresh parsley just before serving.
