Ingredients:

  • 2 lbs fresh green beans, trimmed and snapped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 oz thick-cut bacon, chopped
  • 2 tbsp unsalted butter, cubed
  • 1/2 cup chicken broth
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes

Instructions:

  1. Chop the bacon into small pieces and place them at the bottom of the slow cooker. Note: This creates the flavor foundation.
  2. Dice the yellow onion and mince the garlic, layering them directly over the bacon.
  3. Trim the ends of the green beans and snap them into 2 inch pieces, then pile them on top of the aromatics.
  4. Pour in the chicken broth, kosher salt, black pepper, and crushed red pepper flakes.
  5. Use tongs to gently toss the ingredients until the beans are lightly coated in the seasoning.
  6. Cut the unsalted butter into small cubes and scatter them across the top of the beans.
  7. Cover the pot with a tight fitting lid.
  8. Cook on Low for 7-8 hours or High for 4-5 hours until the beans are tender and have a muted olive tone.
