Ingredients:

  • 12 large fresh mint leaves
  • 1 oz fresh lime juice
  • 2 tsp superfine sugar
  • 2 oz white rum
  • 3 oz club soda
  • 1 cup crushed ice
  • 1 mint sprig for garnish
  • 1 lime wheel for garnish

Instructions:

  1. Place the fresh mint leaves and superfine sugar into a sturdy highball glass. Clap the mint leaves once between your palms before adding to the glass to begin releasing oils, then pour in the fresh lime juice.
  2. Using a muddler, apply firm downward pressure and give 3-4 gentle twists. Ensure the leaves remain intact and do not become shredded to avoid releasing bitter chlorophyll.
  3. Fill the glass halfway with crushed ice and pour the white rum over the ice. Use a long bar spoon to fold the mint and lime juice upwards from the bottom.
  4. Pack the remainder of the glass tightly with more crushed ice. Top with club soda and give one final gentle stir to incorporate the carbonation.
  5. Garnish with a fresh mint sprig and a lime wheel. Serve immediately.
