Ingredients:
- 12 large fresh mint leaves
- 1 oz fresh lime juice
- 2 tsp superfine sugar
- 2 oz white rum
- 3 oz club soda
- 1 cup crushed ice
- 1 mint sprig for garnish
- 1 lime wheel for garnish
Instructions:
- Place the fresh mint leaves and superfine sugar into a sturdy highball glass. Clap the mint leaves once between your palms before adding to the glass to begin releasing oils, then pour in the fresh lime juice.
- Using a muddler, apply firm downward pressure and give 3-4 gentle twists. Ensure the leaves remain intact and do not become shredded to avoid releasing bitter chlorophyll.
- Fill the glass halfway with crushed ice and pour the white rum over the ice. Use a long bar spoon to fold the mint and lime juice upwards from the bottom.
- Pack the remainder of the glass tightly with more crushed ice. Top with club soda and give one final gentle stir to incorporate the carbonation.
- Garnish with a fresh mint sprig and a lime wheel. Serve immediately.
