- 1 tsp vanilla extract
- 1/2 cup chocolate protein powder (whey or pea-based blend)
- 1/4 cup Dutch-processed dark cocoa powder
- 1/4 cup almond flour
- 1/4 tsp sea salt
- 2 tbsp mini dark chocolate chips
- 1 pinch flaky sea salt (for topping)
Instructions:
- Place the 1/2 cup natural almond butter, 3 tbsp Grade A maple syrup, and 1 tsp vanilla extract into your large glass bowl. Whisk vigorously until the mixture looks like glossy, liquid lava. Note: If your almond butter is stiff from the fridge, 15 seconds in the microwave will save your arm muscles.
- Position your fine mesh sieve over the bowl and add the 1/2 cup chocolate protein powder, 1/4 cup Dutch processed cocoa, 1/4 cup almond flour, and 1/4 tsp sea salt. Sift them directly into the wet ingredients until the powder is fine and cloud like.
- Grab your stiff silicone spatula and begin folding the dry mixture into the lava. Use a pressing motion against the side of the bowl until a thick, cohesive dough forms and no dry spots remain.
- Toss in the 2 tbsp mini dark chocolate chips. Fold them in gently until they are evenly speckled throughout the dark dough.
- Use your cookie scoop or a tablespoon to portion the dough into 12 equal mounds on a piece of parchment paper.
- Roll each portion between your palms until they are perfectly round and smooth.
- Arrange them on a plate and add a tiny pinch of flaky sea salt to the top of each ball.
- Optional but recommended: Place the plate in the fridge for 20 minutes until the balls feel firm and the chips are cold. This sets the structure and makes the flavors pop.
