- 1.5 lbs boneless skinless chicken breasts, sliced into 1/2-inch strips
- 1/3 cup neutral oil (avocado or grapeseed)
- 1/4 cup freshly squeezed lime juice
- 2 tbsp fresh orange juice
- 1 tbsp Worcestershire sauce
- 4 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tbsp honey
Instructions:
- In your large glass bowl or Ziploc, combine the lime juice, orange juice, oil, and Worcestershire sauce. Whisk vigorously until the liquid looks creamy and fully combined. Note: This creates the emulsion that will stick to the meat.
- Add the minced garlic, chili powder, smoked paprika, cumin, oregano, salt, pepper, and honey. Whisk again until the honey is fully dissolved and no spice clumps remain.
- Slice your chicken strips and place them into the mixture. Ensure every single piece is completely coated.
- If using a bag, squeeze out as much air as possible and massage the meat for about 60 seconds. Note: This helps the marinade penetrate the fibers faster.
- Seal it up and let it chill in the fridge for at least 2 hours.
- Heat your skillet over medium high heat with a tiny splash of oil until it's shimmering and almost smoking.
- Add the chicken in a single layer (work in batches if needed). Let it sit undisturbed for 3 minutes until a dark, caramelized crust forms.
- Toss the chicken and continue cooking for another 8-9 minutes until the internal temperature hits 165°F.
- Remove the chicken from the heat and let it rest for 3 minutes before serving. While the chicken is resting, I love to use that same hot pan to char some tortillas.
