Ingredients:

  • 1/2 cup (100g) brown sugar
  • 1/4 cup (60ml) water
  • 1 tsp (5ml) vanilla extract
  • 1 pinch sea salt
  • 1 tsp (2g) ceremonial grade matcha powder
  • 2 oz (60ml) hot water
  • 1 cup (240ml) oat milk

Instructions:

  1. Combine brown sugar, water, and a pinch of salt in a small saucepan over medium heat.
  2. Stir constantly until the sugar dissolves and the mixture reaches a gentle simmer.
  3. Simmer for 3–5 minutes until the mixture thickens into a syrupy consistency that coats the back of a spoon.
  4. Remove from heat and stir in the vanilla extract; set aside to cool slightly.
  5. Sift the matcha powder through a fine-mesh sifter into a bowl or cup to remove clumps.
  6. Add 2 oz (60ml) of hot water (approximately 175°F/80°C) to the sifted matcha.
  7. Use a handheld frother or whisk in a 'Z' motion for 30 seconds until a thick, frothy layer of bubbles forms.
  8. Pour 2–3 tbsp of the prepared brown sugar syrup into the bottom of a glass.
  9. Add oat milk to the glass, followed by the frothed matcha slurry to create distinct layers.
