Instructions:

  1. In a large mixing bowl, whisk together the almond flour, vanilla protein powder, and sea salt until no large clumps remain.
  2. Add the softened light cream cheese, maple syrup, and vanilla extract to the dry ingredients. Use a silicone spatula to fold and press the mixture against the sides of the bowl until a thick, cohesive dough forms.
  3. Gently fold in the crushed freeze-dried blueberries and lemon zest, allowing the berries to slightly streak the dough.
  4. Use a small cookie scoop to portion the dough into 12 even pieces. Roll each piece into a ball between your palms.
  5. Place the bites on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes to firm up before serving.
