Instructions:
- In a large mixing bowl, whisk together the almond flour, vanilla protein powder, and sea salt until no large clumps remain.
- Add the softened light cream cheese, maple syrup, and vanilla extract to the dry ingredients. Use a silicone spatula to fold and press the mixture against the sides of the bowl until a thick, cohesive dough forms.
- Gently fold in the crushed freeze-dried blueberries and lemon zest, allowing the berries to slightly streak the dough.
- Use a small cookie scoop to portion the dough into 12 even pieces. Roll each piece into a ball between your palms.
- Place the bites on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes to firm up before serving.
