Ingredients:

  • 2 cups (180g) Rolled Oats (Old Fashioned)
  • 1 tsp Baking powder
  • 1 ½ tsp Ground cinnamon
  • ½ tsp Sea salt
  • ½ cup (75g) Raisins
  • 2 cups (480ml) 2% Milk or milk of choice
  • ½ cup (125g) Unsweetened applesauce
  • 2 Large Eggs
  • ¼ cup (60ml) Pure maple syrup
  • 1 tsp Pure vanilla extract
  • 2 tbsp (28g) Melted coconut oil

Instructions:

  1. Preheat your oven to 350°F (180°C) and lightly grease a 9x9 inch or 8x8 inch square baking dish.
  2. In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and sea salt. Stir in the raisins.
  3. In a separate bowl, whisk the eggs until well blended. Incorporate the milk, unsweetened applesauce, maple syrup, vanilla extract, and melted coconut oil. Whisk vigorously until the mixture is uniform.
  4. Pour the liquid mixture over the dry oat foundation. Use a silicone spatula to merge the ingredients until well combined.
  5. Pour the mixture into the prepared baking dish and let it sit for 5 minutes. Bake for 35 minutes until the top is golden-brown and the center is set.
  6. Remove from the oven and let it sit for at least 10 minutes.
