Ingredients:
- 2 cups (180g) Rolled Oats (Old Fashioned)
- 1 tsp Baking powder
- 1 ½ tsp Ground cinnamon
- ½ tsp Sea salt
- ½ cup (75g) Raisins
- 2 cups (480ml) 2% Milk or milk of choice
- ½ cup (125g) Unsweetened applesauce
- 2 Large Eggs
- ¼ cup (60ml) Pure maple syrup
- 1 tsp Pure vanilla extract
- 2 tbsp (28g) Melted coconut oil
Instructions:
- Preheat your oven to 350°F (180°C) and lightly grease a 9x9 inch or 8x8 inch square baking dish.
- In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and sea salt. Stir in the raisins.
- In a separate bowl, whisk the eggs until well blended. Incorporate the milk, unsweetened applesauce, maple syrup, vanilla extract, and melted coconut oil. Whisk vigorously until the mixture is uniform.
- Pour the liquid mixture over the dry oat foundation. Use a silicone spatula to merge the ingredients until well combined.
- Pour the mixture into the prepared baking dish and let it sit for 5 minutes. Bake for 35 minutes until the top is golden-brown and the center is set.
- Remove from the oven and let it sit for at least 10 minutes.
