Ingredients:

  • 1 lb elbow macaroni
  • 1 cup celery, finely diced
  • 1/2 cup red onion, finely minced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup sweet pickle relish
  • 1 cup mayonnaise
  • 1/2 cup BBQ sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add the macaroni and cook for 1-2 minutes less than the package directions (al dente). Drain the pasta and immediately rinse with cold water until the noodles are cool to the touch.
  2. In a medium bowl, combine the mayonnaise, BBQ sauce, apple cider vinegar, Dijon mustard, smoked paprika, salt, and pepper. Whisk until the mixture is a uniform, pale-orange color and completely smooth.
  3. In an extra-large bowl, combine the cooled macaroni, diced celery, red onion, bell pepper, and relish. Pour the BBQ dressing over the top and gently fold the ingredients together until every noodle is coated.
